Pomegranate Kiwi Salad with Raspberry Apple Vinaigrette

One of my absolute favorite fruits is Pomegranate. I love delicately removing all the plump seeds, and then enjoying their crunchy juicy goodness on a hot summer day! Growing tired of the everyday salad, I thought to myself “These little guys would add such great flavor and texture to a salad!” And so, the Pomegranate Kiwi Salad was born. I just make up a big bowl of this nutritious salad and eat it throughout the week. It’s perfect for summer, just for yourself, or as an accent to that barbecue or garden party you’ve been meaning to host!

Everything in this salad is raw, and it is so easy to make!

Just as a quick note: When de-seeding the pomegranate, I like to keep a small bowl filled with water nearby, so I can rinse my hands, and remove any pesky flesh from the seeds.

Ingredients:

5 Leaves Romaine
3 Leaves Kale
1/4 Red Onion
4 or 5 Radish
1 Pomegranate
1 or 2 Kiwi
Shaved Almonds, garnish

Dressing:

Raspberry Jam
Apple Juice/Cider
Extra Virgin Olive Oil
White Vinegar
Amounts are to taste

Instructions:

Tear up romaine and kale into bite size pieces, set aside. De-seed pomegranate, set seeds aside. Slice red onion, radish, and kiwi. Combine all ingredients into salad bowl. Garnish with shaved almonds.
Combine dressing ingredients in small bowl, whisk together. Serve over salad.
